Now the clocks have gone forward we can get out into our gardens and find it full of good things. Here is some remedies and recipes to make our way through this beautiful time of year. All of these are taken from the book Blessed Be. Read and enjoy, eat and enjoy. Heal x

February – Nettle Soup

Spring Tonic – fortifying and cleansing

‍  25g butter
1 medium onion  
2 cloves of garlic  
400g potatoes, peeled and chopped  
450g freshly picked nettle tops  
1 litre vegetable stock‍ ‍

150ml double cream (for richer, creamier version)‍ ‍

Salt and freshly ground black pepper to taste

‍Melt the butter in a large pan. Add the onion and garlic and fry for 10minutes. Add the potatoes and nettles and stir for 2minutes. Cover with the stock, bring to the boil and then reduce heat to simmer for a further 15 minutes. Leave to cool.

‍ ‍Blend the ingredients to a puree consistency, stir in the cream if desired and the seasoning. Reheat and serve.

‍ ‍March – Recipe

Sage Throat gargle

4 – 6 freshly picked sage leaves

 Place the sage leaves into a mug and add boiling water.

Leave to steep for 15 minutes.

Strain and cool.

When cool, place 1 – 2 dessert spoons of the liquid into a separate cup and use to gargle with, three – four times a day.

Store in the fridge.

This should make enough gargle to last for a day or two. Make fresh as required.

Sing freely as desired.
